12×30 Challenge: March



March has been my favorite month for the 12x30Challenge so far. I mean, No Spend February wasn’t hard to beat really, but I have loved making more of an effort in the kitchen this month. I am constantly uploading photos of food on Instagram. Sometimes it’s food I’ve ordered at restaurants but most of the time the photos are my personal creations. I am not claiming to be a great cook or to have a lot of experience in the kitchen, but if you knew me two years ago you would be shocked at the progress I’ve made so far.

Two years ago I was living in a townhouse finishing up college and still eating frozen chicken nuggets and boiling ravioli. I was actually really impressed with myself the first time I “made” ravioli, aka boiled frozen ravioli and made homemade garlic bread on hamburger buns.

Today I’m cooking lasagna, stuffed shells, and every soup I can find. The past two weeks have been eye opening for me and I’ve created and tested some new dishes that I’m very proud of. I truly believe that this month’s challenge will continue throughout the remainder of the year.

    Making new recipes that actually turn out is really exciting! I seriously love being able to add a new dish to my life long menu!!
