Summer is one of my favorite seasons for many reasons but one major reason being that I love baking with fresh fruits! My go-to summer dessert is Strawberry Pretzel Salad. The salty pretzel crust, fluffy cream cheese layer and juicy strawberries make the perfect combination of deliciousness. When I told my roommates I was whipping some up they were confused….it took me a minute to realize they had no idea what I was talking about! How is that possible?! My Mom and I have made pan after pan of pretzel salad over my lifetime. It must be a southern thing but my roommates have given the full seal of approval and the pan did not last long in this house!

  • 2 cups crushed pretzels
  • 3/4 cup melted butter
  • 3 tbsp of sugar
  • 8 oz cream cheese
  • 3/4 cup of sugar
  • 8 oz whipped topping
  • 2- 3 oz packages of strawberry gelatin dessert mix
  • 2 cups of boiling water
  • 2- 10 oz packages of frozen strawberries

  1. Preheat the oven to 400 degrees farenheit
  2. Crush pretzels in a medium bowl
  3. Add melted butter and 3 tbsps of sugar and mix together
  4. Spread mixture on the bottom of a 9×13 pan and bake for 7 minutes. Place in fridge to cool and harden
  5. In a mixing bowl beat together the cream cheese, 3/4 cups of sugar, and fold in the whipped topping
  6. Spread over the cooled pretzel crust
  7. Refrigerate for at least 2 hours to set
  8. In a small bowl make gelatin according to package directions and mix in frozen strawberries
  9. Pour over the whipped topping
  10. Place in the refrigerator for 4 hours or until well set
  11. Keep refrigerated until serving
