Slow Cooker Monday- True Lemon Chicken

Happy Monday everyone!

I mentioned last week that I’ve teamed up with True Citrus products and will be posting a few recipes that feature their products. Last week I shared how I like to enjoy the drink mixes and today I’m sharing a slow cooker recipe using their lemon packets! 

I typically like to cook with fresh products but I don’t always have them on hand. For instance, when making this recipe I realized I didn’t have a fresh onion so I improvised with minced onions. Instead of using a fresh lemon for my lemon chicken recipe I opted to try the lemon packet from True Citrus. I was pleasantly surprised and loved that I still had the fresh lemon taste and there was no artificial colors or sweeteners, preservatives, gluten or sodium! One packet is equal to one lemon wedge so I used two lemon packets and sprinkled another one in the crock pot when the meal was almost ready.

Seriously you guys this stuff is so yummy and it makes me feel good to know that I’m cooking a healthy meal for myself and loved one!

Ingredients
  1. - 4 boneless, skinless chicken breasts
  2. - 4 tablespoons of unsalted butter
  3. - 1 onion
  4. - 2 garlic cloves
  5. - salt and pepper
  6. - 4 cups of chicken broth
  7. - 1/4 cup of lemon juice
  8. - 2 cups of long grain and wild rice
  9. - 1/4 cup of finely chopped parsley
Instructions
  1. 1. Melt 2 tbsp of butter over medium high heat. Add in chopped onion and cook for about 4-5 minutes. Add in garlic and cook for another 1 minute.
  2. 2. Transfer mixture to the slow cooker
  3. 3. Melt remaining 2 tbsp of butter and add chicken breasts. Cook until each side is browned. Transfer to slow cooker
  4. 4. Add 1 cup of chicken broth and lemon to skillet and boil. Scrape skillet and ingredients into the slow cooker
  5. 5. Add remaining broth, rice and salt to slow cooker. Cook on low for 2-3 hours or until chicken is cooked thoroughly and tender.
  6. 6. Remove from slow cooker and add parsley
