#54 Cook Dinner

#54 on my 101 in 1001 days list is “Cook dinner for my parents”. Seems simple but I live two and a half hours away from them so popping over on to whip up Sunday dinner just isn’t possible. When I found out that I was going to be able to spend four days in Delaware over the holidays I was so happy. My family means the world to me and being able to spend quality time with them is so precious.

One of the things my family loves to do is host our friends and family but this means about a weeks’ worth of meals that my Mom and Dad cook in the kitchen. In an effort to spend more time out of the kitchen and with our loved ones, my Mom asked if I could be responsible for making dinner one night during the week I was home. I jumped at the chance because I’ve been cooking up a storm in Baltimore and sending them pictures but they haven’t been able to eat anything I’ve made.

I had a bunch of ideas but I kept coming back to the fact that my family is very particular about what they eat (as am I, but I’m trying to branch out) and they all like different things. I decided to go with a taco bar set up so everyone could pick and choose what they wanted on their taco. I also wanted to introduce them to healthier alternatives than what they are used to. My Dad prefers hard taco shells but the fried shell is something he should be avoiding. After talking to him about it and explaining the health benefits he was completely down to switch over to a soft shell. SUCCESS!

I wish I could have made a more elaborate meal but I was still very happy that I had the chance to let them relax and prop their feet up for a bit.
