Slow Cooker Monday- Teriyaki Chicken

For this weeks Slow Cooker Monday recipe I definitely branched out a little bit! I am a picky eater and always have been, but I will say that teaching myself to cook has been a huge help in that department. I am more willing to try new things and have a better grasp on what flavors come from what foods and seasonings. When I stumbled across a recipe for Teriyaki Chicken I realized that I had never tried it but knew that my boyfriend would probably love it. I decided to give it a shot and am so glad I did! The food was great and I was incredibly proud of myself for making homemade teriyaki sauce. I will say that this food prep and clean up is SUPER messy so be prepared to let some pots soak for a day or so.

Ingredients
  1. - 4 boneless skinless chicken breasts
  2. - 2 cloves of garlic
  3. - 1/2 cup chopped white onion
  4. - 1/2 cup honey
  5. - 1/2 cup soy sauce
  6. - 1/8 tsp fresh black pepper
  7. - 1 tbsp chopped fresh ginger
  8. - 1/4 cup cold water
  9. - 3 tbsp of cornstarch
  10. - scallions
Instructions
  1. 1. Place chicken breasts in bottom of your slow cooker
  2. 2. In a separate bowl- whisk together garlic, onion, honey, soy sauce, ginger and black pepper
  3. 3. Pour mixture over chicken in slow cooker
  4. 4. Cook on high for 4 hours- then removed chicken from the slow cooker and shred with a fork
  5. 5. Transfer teriyaki sauce from the slow cooker into a separate bowl
  6. 6. In a third bowl- whisk together cornstarch and cold water until cornstarch is mixed and no longer lumpy
  7. 7. Pour cornstarch mixture into teriyaki sauce
  8. 8. Whisk to combine and transfer into a sauce pan over medium heat
  9. 9. Let boil for 1-2 minutes or until it has thickened
  10. 10. Pour over shredded chicken
  11. 11. Add scallions as garnish

    Megan, Reynolds makes bags that go into your slow cooker and you just throw them away afterwards. Look near your baggies etc section.
