Slow Cooker Monday- Chicken Tortilla Soup

I can’t believe it has taken me this long to make Chicken Tortilla Soup! I was very impressed with this recipe and it’s flavor! This soup has also been a lifesaver especially with all the snow we’ve been getting, so grab your crockpot and whip some up!

Ingredients
  1. - Rotisserie chicken (I used a whole chicken breast but you can add as much or as little as you'd like
  2. - 10 oz diced tomatoes
  3. - 14.5 oz whole tomatoes (undrained)
  4. - 1 cup of frozen corn
  5. - 14.5 oz black beans (drained)
  6. - 1 medium white onion, diced
  7. - 3 cups of chicken broth
  8. - 4 cloves of garlic, minced
  9. - 1 tsp ground cumin
  10. - 1 tsp chili powder
  11. - 1 tsp salt
  12. - 1/4 tsp black pepper
Instructions
  1. 1. Add all ingredients to the crockpot
  2. 2. Cook until warm
