Slow Cooker Monday- Homemade Granola

Over the past few months I’ve been taking serious steps towards eating healthy and making smarter choices with food. One of the meals I’ve grown to absolutely love is yogurt, granola and fruit for my breakfast on the go. Since I work a shift schedule at UMB there are two weeks in every month when I work the 7am shift meaning I would rather sleep than eat a real breakfast. I’ve noticed that granola can be super expensive depending on the brand and quantity and sometimes it’s not even that healthy with all of the added sugar!

Introducing homemade granola in a slow cooker! I am so in love with this recipe because it’s easy, quick, healthy and so yummy! All you have to do is add the ingredients to your slow cooker and let it do all the work. **Please note that you MUST stir the granola every 30 minutes as it burns easily! I’m speaking from experience, trust me on this one!

Ingredients
  1. 5 cups old fashioned rolled oats
  2. 1/2 cup slivered almonds
  3. 1/4 teaspoon kosher salt
  4. 2/3 cup of honey
  5. 1/3 cup coconut oil
  6. 1/2 cup chunky peanut butter
  7. 2 teaspoons cinnamon
  8. 1 tablespoon vanilla
Instructions
  1. - Add oats, almonds, and kosher salt to the slow cooker
  2. - In a microwavable bowl combine honey, coconut oil, chunky peanut butter, cinnamon, and vanilla.
  3. - Microwave until everything has melted
  4. - Stir to combine
  5. - Pour liquid contents over dry ingredients
  6. - Stir to coat
  7. - Cook on high for 2 hours making sure to stir every 30 minutes!
