Slow Cooker Monday- Taco Bowls

I know I say this every week, but this time I’m REALLY REALLY serious. This is my favorite slow cooker recipe that I’ve ever made. Reasons for this? 1). Its super easy 2). The recipe calls for ingredients that I always keep on hand 3). I had enough to last me 5 lunches. 4). IT’S SO SO GOOD!

Ingredients
  1. 1 1/2 pounds of chicken breast (I used frozen)
  2. 16 oz jar of salsa
  3. 15 oz of black beans, drained
  4. 8 oz of frozen corn
  5. 1 tbsp of chili powder
  6. 1 tbsp garlic powder
  7. 1/2 tsp dried oregano
  8. 1/4 tsp cayenne pepper
  9. 1/4 tsp salt
  10. 2 cups of dry rice
Instructions
  1. 1. Add everything to the slow cooker except for the rice and cook on low for 8 hours
  2. 2. Near the end of the 8 hours, make rice
  3. 3. After 8 hours shred chicken in crock pot.
  4. 4. Serve rice and chicken mixture in a bowl together
