Homemade Popsicles

Summer is winding down but the heat is not letting up! The past few weeks in Baltimore have been exceptionally warm and I’m a little tired of sweating 24/7. When I’m sweating while standing and not moving at all, I have an issue with that! In an effort to try and find a way to beat the heat I’ve been making popsicles using my new popsicle mold. It took some trial and error to figure out how to make legit popsicles but I think I’m doing a fine job now! Just ask Byrd aka my official taste tester!

 

Here are a few recipes I’ve been working with and tweaking. I think my favorite is the Cookies and Cream one- so freaking good!

 

Chocolate Covered Strawberry Popsicles

Ingredients:

  • 2 cups of strawberries
  • 1 can of full fat coconut milk
  • 2 tsp of vanilla extract
  • 3 tbsp of coconut oil
  • 12 oz semi sweet chocolate chips

Steps:

1. Blend together strawberries until smooth
2. Add in coconut milk and vanilla. Blend until smooth
3. Pour into molds and place in freezer
4. Once frozen, melt the chocolate chips and combine with coconut oil. 
5. Dip popsicles into the chocolate mixture and place on a piece of parchment paper. Place back in freezer until chocolate has hardened

 

Cookies & Cream Popsicles

Ingredients:

  • 12 oz of coconut milk
  • 10 crushed oreos

Steps:

1. Pour coconut milk into molds until they are 3/4 full
2. Crush Oreos in a ziploc bag and fill each mold with crushed cookies
3. Freeze and enjoy!

I have a few other recipes that I plan to test out over the remainder of the month and will be sure to let you know how they go! I’m leaning more towards a few creamy ideas since the last two I made had a more icy texture.
