SOTD Eats: Quinoa Tacos

In honor of Taco Tuesday I have to share this delicious recipe with you! I have been cooking with quinoa a lot lately and wanted to find a way to incorporate it into a meal that I already loved. I found a recipe for Quinoa Taco’s but didn’t like the ingredients or some of the processes so I tweaked it until I was happy and boy was I happy! This dish is delicious, simple, quick and healthy! I’ll be making it again soon.

Ingredients
  1. 1 1/2 cups of cooked quinoa
  2. 1 tbsp olive oil
  3. 1 small yellow onion, diced
  4. 4 cloves of garlic, minced
  5. 1 cup of chicken broth
  6. 14.5 oz of diced tomatoes, undrained
  7. 1 1/2 tsp chili powder
  8. 1 tsp ground cumin
  9. 1/2 tsp paprika
  10. 1/4 tsp of cayenne pepper
  11. 2 cups of frozen corn
  12. 2 (15 oz) cans of black beans
  13. juice of 1 lime
Instructions
  1. Heat olive oil in a large non-stick pan.
  2. Add onion and cook until golden brown, add in garlic. Cook for 1 minute
  3. Stir in broth, tomatoes, cooked quinoa, chili powder, cumin, paprika, cayenne.
  4. Bring mixture to a boil then cover, reduce heat and simmer for 20 minutes or until mixture has thickened.
  5. Remove from heat.
  6. Add corn and black beans, stir well.
  7. Add in lime juice
  8. ENJOY!
