SOTD Eats: Pumpkin & Chocolate Chip Muffins!

You guys- it is officially Fall which means it’s officially pumpkin season! I have been holding off on sharing and going crazy with the pumpkin recipes until September 23rd. WOOHOO!

Now for the real reason you stopped by Soup of the Day today, Pumpkin Chocolate Chip Muffins! I like pumpkin and enjoy it in my recipes, but I always need a little something extra in there flavor wise. The idea of chocolate chips (I never turn down chocolate) mixed in with my pumpkin sounded pretty delicious. After making a batch and getting reviews from some of my taste testers I think the flavor combo is a smash hit!

Ingredients
  1. 1 and 3/4 cups of all purpose flour
  2. 1 tsp baking soda
  3. 2 tsps cinnamon
  4. 1/4 tsp ground nutmeg
  5. 1/4 tsp ground cloves
  6. 3/4 tsp salt
  7. 2 eggs
  8. 3/4 cup of granulated sugar
  9. 1/2 cup of packed light brown sugar
  10. 1 and 1/2 cups of pumpkin puree
  11. 1/2 cup of vegetable oil
  12. 1/4 cup of orange juice
  13. 2/3 cup of semi-sweet chocolate chips
Instructions
  1. 1. Preheat the oven to 350 degrees Farenheit and line muffin pan with muffin papers
  2. 2. In a large bowl whisk flour, baking soda, cinnamon, nutmeg, cloves and salt together until combined
  3. 3. In a medium bowl whisk eggs, granulated sugar and brown sugar until combined. Whisk in the pumpkin, oil, and orange juice until combined.
  4. 4. Pour the wet ingredients into the dry ingredients and gently mix using a spatula
  5. 5. Do not overmix! Gently fold in chocolate chips
  6. 6. Fill each muffin 3/4 full
  7. 7. Bake for 18 minutes. Insert toothpick in center to determine if the muffin is baked thoroughly
  8. 8. Put in for another 1-2 minutes if not.
  9. 9. Enjoy!
