Easy Raspberry Sorbet

As an event coordinator my busy season is right now! From May to October I don’t stop moving! Whether I’m coordinating a food truck market, a happy hour on a historic ship or a family friendly concert at one our waterfront parks- I’m always moving.

Running around to events leaves me little time to ensure my body gets the nutrients it needs to stay healthy during such a busy season. I look to Emergen-C to pick up the slack! I take it regularly all year long and pick it up at my local Walmart. You can find Emergen-C in three different flavors (orange, raspberry and tangerine) in the Vitamin aisle at Walmart.

I drink Emergen-C a few times a week, but instead of mixing it with water every time, sometimes I mix it into recipes to keep things interesting! During the summer months I love to make fresh and delicious healthy treats to take with me when I am out and about in the city. Raspberry sorbet has been my go-to lately because it’s dairy free (win!), delicious (win!) and the raspberries are so good right now! All I do is mix the Raspberry Emergen-C in with the water included in the recipe and continue making the sorbet following the rest of the recipe.   It’s super easy to make and only requires six ingredients!

After I’ve whipped up a batch of sorbet I package it into small mason jars and store it in my freezer so I can easily grab and go when I want a snack, usually that means when I’m out riding my bike along the waterfront. My favorite thing to do when I’m not producing an event is ride my bike along the waterfront and relax. There is something special about a quiet evening with an Inner Harbor view after a long day. I pack my homemade raspberry sorbet (with mixed in Raspberry Emergen-C) for a treat to enjoy as the sun sets before starting another busy day.

Ingredients
  1. 5 cups of fresh raspberries
  2. 1 cup of water
  3. 2 packets of Raspberry Emergen-C
  4. 1 1/2 cups of sugar
  5. 1 tsp of vanilla extract
  6. 1 tsp of lemon juice
Instructions
  1. - Add Emergen-C powder to water and mix until dissolved
  2. - Place raspberries and Emergen-C mixture into a food processor and pulse until mixed well
  3. - Place in a fine mesh strainer to remove seeds from raspberry mixture
  4. - Put raspberry juice mixture in a bowl and mix in sugar, vanilla extract and lemon juice. Whisk until sugar completely dissolves
  5. - Pour sorbet into a shallow container and freeze until sorbet consistency is to your liking.
