SOTD Eats: Pasta Fagioli Soup


Is it getting cooler where you are? The mornings in Baltimore have been crisp and I feel like we are finally moving into Fall. I’ve slowly started pulling out my sweaters, boots and even gloves in anticipation for the cold months. I feel like the next three months are going to fly by with all of the large events I’m producing and winter will be here before I know it. I’m trying hard to slow down and enjoy the season while it’s here. 

In order to enjoy Fall before it’s gone in the blink of an eye, I want to spend less time in the kitchen fussing over meals and more time out and about. Insert crockpot meals. I LOVE my crockpot and use it at least once a week in the Fall and Winter. I pulled it out this week for the first time and am already pinning crockpot recipes like a crazy person on Pinterest. So stay tuned for more delicious meals!

    I want to try this next week, it sounds so delicious and easy to make! Do you cook the noodles separately and then add them to the crockpot for the remaining 4 hours that it is on low? Or do you cook them and add them 20 minutes before? It sounds like the perfect fall meal.

      I usually cook the pasta and have it ready within the last hour of the 4 it needs to cook. 20 minutes before the four hours are up, I throw the pasta in and let it warm up and soak up the flavors! SO GOOD!

      Seriously so good and so easy! With these measurements it makes about 10 servings so I usually eat it a few times that week and put the rest in single serving containers in the freezer!
