Week 2: Crockpot Granola


Did you catch my blog post last week about becoming a morning person? All ten tips are easy ways to feel more awake in the morning, but eating breakfast is the most important to me personally. I feel so much better and ready to tackle the day when I eat a good and filling breakfast. 

My favorite breakfast is definitely SILK (dairy free) yogurt, granola, strawberries, chocolate chips and a little shredded coconut on top. It’s easy to make to eat at the house or to eat on the go. When I plan to take my yogurt to work I just fill a small mason jar with yogurt and chopped fruit. I mix the granola, chocolate chips and shredded coconut in a small bag and add it when I’m ready to eat the yogurt. 

It’s also a healthier option as opposed to grabbing something from Dunkin Donuts on the way to work…


  • 5 cups old fashioned rolled oats
  • 1/2 cup slivered almonds
  • 1/4 tsp kosher salt
  • 2/3 cup honey
  • 1/3 cup coconut oil
  • 1/2 cup chunky peanut butter
  • 2 tsp cinnamon
  • 1 tbsp vanilla extract


  1. Spray your crock pot or use a crock pot liner- this recipe sticks easily and burns easily!
  2. Add oats, almonds, and kosher salt to crockpot
  3. In a small bowl combine honey, coconut oil, chunky peanut butter, cinnamon, and vanilla extract- melt and mix well
  4. Pour liquid mixture into the crockpot and stir well
  5. Cook granola on high for two hours or low for four hours. This recipe burns easily so I recommend stirring every thirty minutes!
