Week 4: Superbowl Chili

Superbowl Chili

Superbowl Sunday is next week and I can’t wait! Whether you watch for the football, the commercials and halftime show or deal with the game in order to nosh on some yummy food- it’s a big deal!

I grew up in a football-loving household but I wasn’t always a fan. As a kid and teenager I would stock up on magazines leading up to the game and would only look away for the commercials and halftime show. But I loved spending the time with my family and friends and enjoying good food!

My parents Superbowl Chili was a staple growing up and I’ve carried the recipe with me into adulthood. It’s so stinkin’ good! I first used the recipe in 2013 when the Ravens went to the Superbowl. It was my first year in Baltimore and my Mom was beaming with pride when I told her I was hosting a Superbowl Party. The chili was a hit and I knew then that I had to continue the tradition.

This year since Chris and I are finally in a house we are hosting some of our friends for the game. Although our team isn’t playing I am excited to have everyone at our house, enjoying each other’s company and chowing down! I’m making the Soup family chili for the occasion and cornbread muffins to go along with it.

The best part is that it’s yet another crockpot recipe! I will add all the ingredients, turn it on and get to work on other treats. Win-win!

Ingredients:

  • 1.5 lbs lean hamburger
  • 16 oz light red skinned kidney beans
  • 28 oz whole tomatoes
  • 1 tsp salt
  • 3 tsp minced onions
  • 1.5 tsp chili powder
  • 2 tsp tomato paste
  • 2 tsp garlic powder

Steps:

  1. Crumble ground beef in the bottom of the crockpot
  2. Add remaining ingredients (drain kidney beans)
  3. Cook on low for 8 hours or high for 4 hours.

I ALWAYS serve my chili with cornbread either in muffin form or waffle form! Say whhaaaaa? Yup! I mix the cornbread batter and instead of pouring into a muffin pan I pour into the waffle iron and then serve the chili on top. SO YUMMY!

I am loving these crockpot recipes! This chili sounds so good! Putting the cornbread mix into a waffle maker is genius!
