Week 8: Pasta Fagioli Soup

This recipe was originally posted in October, but I HAD to share it again. This is hands down my favorite recipe to make in the crockpot and I’d be doing my readers a huge disservice if I didn’t re-post it.

Olive Garden’s Pasta Fagioli soup is my favorite so recreating it at home was huge for my bank account and also to make it a little healthier than the restaurant version. This is perfect eaten immediately after cooking and also freezes really well to eat later in the winter season. 

I always make a batch of corn muffins or garlic bread to enjoy with the soup so I recommend you do the same!

 Ingredients:

  • 2 lbs of ground beef
  • 1 yellow onion, chopped
  • 1 (280z) can of diced tomatoes, drained
  • 1 (160z) can of white kidney beans
  • 1 (16oz) can of red kidney beans
  • 4 cups of beef stock
  • 1 (20oz) jar of spaghetti
  • 3 tsp oregano
  • 2 tsp pepper
  • 5 tsp parsley
  • 8 oz of ditalani pasta

Steps:

    1. Add all ingredients except pasta to the crock pot
    2. Cook on low for 8 hours
    3. At the end of 4 hours turn the crockpot to low, cook pasta according to directions on the box
    4. Add the pasta to the crockpot and cook for 20 minutes
    5. Enjoy!

    I make this all the time too! I was surprised at how simple it is to make. Our closest Olive Garden is over an hour away so it’s nice to be able to make at home.

    Olive Garden has the best soups!! The Zuppa Toscana is my favorite but Dave really likes this one- we might have to give it a try! I have really wanted soup the last two days because I am been feeling so crappy, maybe he can buy the ingredients for this or the tort soup 😉
