Week 9: Chicken & Dumplings

YOU GUYS. I AM SO EXCITED ABOUT THIS RECIPE! Chicken and Dumplings are my all time favorite food. They remind me of my childhood sitting with my grandmother and brother every Thursday enjoying a plate of dumplings and tender chicken. 

For those who aren’t chicken and dumplings aficionados- there are two kinds of chicken and dumplings out there, slippery dumplings and thick doughy dumplings. I grew up eating and still cook slippery dumplings to this day but the crock pot makes it easy to enjoy the doughy dumplings too! I don’t discriminate when it comes to chicken and dumplings…

I stumbled across the crock pot chicken and dumplings recipe from Spend with Pennies and modified it a little to my tastes but it’s pretty spot on! Two things to note- if you have to take the lid off do it quickly and as infrequently as possible. Keeping the lid off increases the time necessary to cook throughly. Also, cook the dumplings for AT LEAST 60 minutes so they are cooked thoroughly. This is not a recipe to rush!

Ingredients:

  • 1 large onion, diced
  • 1 can (10.5 oz) cream of celery soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tablespoon fresh parsley
  • 1 teaspoon poultry seasoning
  • black pepper to taste
  • 4 skinless boneless chicken breasts
  • 2 cups low sodium chicken broth
  • 2 cups frozen vegetables or peas and carrots, defrosted
  • 1 can (8 pieces) refrigerated biscuits

Steps:

  1. Add onion to 6 qt crock pot and top with chicken breasts
  2. In a small bowl, combine cream of celery soup, cream of chicken soup, parsley, poultry seasoning and pepper. Spread over chicken breasts. Top with chicken broth and cook on high for five hours
  3. 1 hour before serving roll each biscuit thin and flat, cut into 4 strips. 
  4. Add vegetables to crockpot, stir, add biscuit strips on top
  5. At five hours remove chicken breasts and shred, add back into crockpot and stir
  6. Cool and then enjoy!

    YUM YUM YUM. I wonder if I could make this gluten-free!? I’ve never had chicken and dumplings! But I’ve got some vegan chicken and a hungry stomach to try anything new! Thanks for all these awesome recipes!
