Italian Chicken



Happy Friday friends! And welcome to another installment in the 52 Weeks of Crockpot Recipes series! Can I first apologize for the state of these photos…. You guys, I am trying but I did not realize that food photography was going to be so difficult! Especially sauce covered chicken on a bed of noodles…

Anyway, trust me when I say that the food tastes amazing even if maybe I didn’t do a great job of capturing it. We eat a lot of Mexican and Italian inspired dishes at our house and this Italian Chicken was the perfect addition to weeknight dinners. It was easy to throw into the crockpot and was a great over a bed of pasta and by itself with a side of couscous or rice. 

If you are looking to jazz up your usual chicken recipe, this one is for you!


  • 2 lbs boneless skinless chicken breasts
  • 1 small red bell pepper, chopped
  • 24 oz garden variety pasta sauce


  1. Spray the inside of the cockpot with cooking spray
  2. Place chicken breasts in crock pot
  3. Cover with chopped red pepper and pasta sauce
  4. Cook on high for 4 or 5 hours

    SO easy! Trying with tofu this week! (: also food photography is SO hard and my least favorite to do. It’s why I rarely have recipe posts. I HATE taking pictures of food!

      Girl it’s so hard. The photos for the bread recipe coming this week are so much better because I used my real camera and I’m so proud of them, but they’re STILL not great….
