Week 14: Chicken Burrito Bowls

Chicken Burrito Bowl

Ya’ll, this is my all time favorite and most repeated crockpot recipe. It’s better than a burrito bowl that costs almost $10 at Chipotle and this recipe makes five servings! 

To spice up the recipe a little bit, add your favorite taco seasoning. I found these to be enough, but this recipe is easy to customize and make your own. 

But the best part of making Chicken Burrito Bowls in the crockpot is adding ALL of the toppings when you chow down! Sour cream, cheese, salsa, avocado, pick your poison and load it up!

Ingredients:

  • 1 pound boneless skinless chicken breasts
  • 1 14.5-ounce can diced tomatoes
  • 1 cup chicken stock, divided, plus more if needed
  • 2 teaspoons chili powder
  • 2 teaspoons salt
  • 1 teaspoon cumin
  • 1 cup brown rice
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup frozen corn

Steps:

  1. Place chicken breasts on the bottom of the crockpot
  2. Add in diced tomatoes, chicken stock, chili powder, salt, and cumin
  3. Cook on LOW for 6 to 8 hours
  4. Cook rice separately
  5. 30 minutes before the cooking time is up, add in cooked rice, black beans and corn.
