You guys. Mashed potatoes are my favorite food on the planet- especially when they are served with chicken and dumplings, but I’ll take ’em solo as well! With butter, gravy, swirls of roasted garlic, I don’t discriminate. Since tomorrow is my birthday I wanted to share a crockpot recipe that I LOVED today. Crockpot mashed potatoes are the only way to cook them in my opinion. It’s so easy!
Once you’ve skinned the potatoes (my least favorite part) the crockpot does the rest of the work! Honestly, I’m just a huge fan of putting the ingredients in the crockpot and walking away knowing that it’s doing all of the work and I can put my energy elsewhere.
I hope some of you try this next time you make mashed potatoes, especially Macy!
- 1 pound of yukon gold potatoes
- 1 cup of chicken stock
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/4 cup of Earth Balance Butter
- 3 cloves of roasted garlic
Peel potatoes and cut into chunks
Add potatoes, chicken stock, onion powder into the crockpot
Cook on high 3-4 hours or low for 6-7 hours
Mash potatoes until smooth
Mix in salt, pepper, Earth Balance butter and roasted garlic
