Week 18: Chicken Fajitas

Chicken Fajitas

 

Happy Cinco de Mayo friends!

I was supposed to be kicking off two event series’ today but with the gross rainy weather they’ve been canceled. However, more events are kicking off next week and I can’t wait!  May is a big month for me professionally and I’ll be leaning on my crockpot meals more than ever! More events in motion means less time in the kitchen to prep meals for our household. This recipe will definitely be on repeat! 

This Chicken Fajita recipe is really similar to some of the Mexican recipes I’ve made previously but the peppers were a new ingredient for me and I loved the flavor they brought to the dish! I will be incorporating them more often.

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 (14.5 oz) can of petite diced tomatoes
  • 1 red, orange, yellow peppers, julienned
  • 1 large yellow onion, chopped
  • 4 cloves of garlic, minced
  • 2 1/2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 3/4 tsp ground coriander
  • 1 tsp salt
  • 3/4 tsp pepper
  • 2 tbsp fresh lime juice

Steps:

  1. Spread half of the can of tomatoes on the bottom of the crock pot
  2. Add in half of the peppers and onions
  3. Sprinkle garlic in
  4. Top with chicken breasts
  5. In a bowl whisk the rest of the seasoning together and pour over chicken, flip chicken to the other side, pour the remainder of the bowl on top of the chicken
  6. Top with the rest of the tomatoes and layer the remaining peppers and onions on top
  7. Cover and cook on high 3-4 hours or low 6-8 hours. 
  8. When cooked, remove chicken, shred using two forks. Before returning to crockpot, ladle out 1-2 cups of broth then return the chicken to the` crockpot. Allow to cook on low for 30 more minutes. 
  9. Enjoy!
