Week 24: Stuffed Peppers

Stuffed Peppers

Happy Friday friends! I’ve shared some pretty easy recipes for the 52 Weeks of Crockpot Recipes challenge, but this may be the easiest. Mark my words. 

All you do is make your favorite taco stuffing- mine is ground beef, corn, black beans, rice, and tomatoes/salsa and cut up a pepper. Literally that is it! 

This recipe is seriously an example of the crockpot doing all of the work. It’s also a favorite of mine because it’s quick! It takes 2-3 hours on high for the pepper to cook which is just enough time from the minute I get home until Chris gets home and is ready for dinner.

Feel free to mix up this recipe and use ground chicken or ground turkey and your favorite ingredients. You can also get creative on the toppings! I used a dollop of salsa and a sprinkle of Mexican cheese but go crazy with scallions and sour cream too.

Ingredients:

  • 2 red or green peppers
  • Taco stuffing: ground protein, rice (white, brown or spanish), black beans, corn

Steps:

  1. Cook your protein on the stove and add in your other ingredients
  2. Spray the inside of the crock pot with non-stick cooking spray
  3. Cut your peppers in half, remove the seeds
  4. Fill each pepper half with the cooked taco stuffing
  5. Place in the crockpot and cook on high for 2-3 hours
  6. When time is up remove each pepper and top with your favorite toppings
  7. Enjoy!
