Week 27: Cilantro Lime Chicken Tacos

I love a good taco recipe and will choose a shredded chicken recipe using my crockpot ANY DAY. Chris is a Super Taster. Have you heard of this? I hadn’t until I met Chris. Super Tasters have intense reactions to certain flavors and essentially taste things at a more enhanced rate. Chris can’t eat cilantro because it tastes like soap to him. I don’t LOVE cilantro, so when I started cooking for both of us I just cut it out. 

But, Chris was away on vacation last week with a childhood friend and I figured it would be the time to test a new recipe that includes cilantro! Cilantro lime chicken tacos were such a good choice and I ate it all week as tacos, in burrito bowls and also as a main dish with spanish rice on the side. 

Enjoy!

Ingredients:

  • 2 pounds of boneless skinless chicken breasts
  • 2 T your favorite taco seasoning
  • 16 oz jar of salsa
  • 1/2 cup chopped cilantro
  • 2 limes

Steps:

  1. Place chicken in crockpot
  2. Spread ingredients over chicken and squeeze lime juice on top
  3. Cook on high for four hours or low for eight hours
  4. Shred chicken
  5. Moisten with small amounts of juice from the crockpot and serve!
