Week 28: Jamaican Jerk Chicken

Jamaican Jerk Chicken

Whew… this little series was put on the back burner over the last few weeks while my life took off and became insane! So sorry friends! While this started as a goal for 2017 I will 100% continue posting delicious recipes until I’ve reached 52 weeks!

I noticed a trend with my cooking and especially my crockpot recipes- lots of soups, lots of Mexican dishes and lots of the same ingredients. I decided to switch things up with the crockpot as well as the dishes that I’m making for Chris and I. Get excited to see some new things coming to the blog!

But first! We tried this Jamaican Jerk Chicken recipe from Fit Slow Cooker Queen. It was a risk for me because I didn’t even know if the flavors would be something I’d enjoy. Surprise- Chris made this recipe for us! I woke up at 4:30am for a tv interview on the morning that we had hoped to enjoy the chicken for dinner which meant I couldn’t start the crockpot. My man prepped all the ingredients and did it for me. It’s the little things that make my heart so happy.

He did a great job and the chicken was delicious! We wanted to eat it with rice as a side dish but realized we were out so whole wheat penne was the next best option. We poured the broth from the crockpot over the pasta and it was delicious!
