Week 30: Baked Potatoes

Baked Potatoes (1)

Ok friends- this may be the simplest but BEST thing I’ve tried in the crockpot yet.

I love baked potatoes but can never get them quite right. It takes so long to bake them and it never fails, I’ll hit spots that aren’t cooked all the way through… so frustrating!

Chris and I had a quiet Labor Day at home with no big plans but a few errands. I knew I didn’t want to fuss with the potatoes after being out and about so I put them in the crockpot and they were ready by the time Chris finished grilling burgers later that evening. It was perfect and THEY were perfect.

Seriously if you learn nothing else from me, let it be that baked potatoes in the crockpot is the easiest, simplest, cleanest and best thing to use your crock pot for!

  • Scrub the skins of the potatoes and dry them
  • Use a fork and make holes throughout the potato
  • Tear off a piece of aluminum foil just big enough to wrap around the potato, place the potato in it, drizzle with olive oil and top with sea salt. Wrap foil around potato
  • Add as many as you want to your crockpot based on size.
  • Cook on high for 4-5 hours or low for 8-10

I love baked ones in the crockpot–have you done mashed potatoes in it?! I did one year for Thanksgiving to save time and wow were they good!
