Week 32: Minestrone Soup


This weeks post is a copycat recipe of Olive Garden’s Minestrone Soup. I love Olive Garden. There it is. I’ve said it. I know it’s nothing like the restaurants in Little Italy and doesn’t hold a candle to the minestrone soups of Italy but I still love it. 

I combined a few recipes that I found online to create this one which is perfect for me. Feel free to add more spinach, less pasta, add in zucchini or remove kidney beans. It’s completely customizable while still maintaining a great flavor. 

While it’s mid October and the temps are still in the high 80’s outside (how crazy is that?!) I am ready for Fall and bringing it into our lives somehow! 


  • 4 cups of vegetable broth
  • 3 cups of water
  • 2 (14.05 oz) can of diced tomatoes
  • 1 cup of diced carrots
  • 1 cup diced yellow onion
  • 2 t dried parsley
  • 2 t dried basil
  • 1 t dried oregano
  • 3/4 t dried rosemary
  • 1/2 t dried thyme
  • 2 bay leaves
  • 1/2 tsp sugar
  • 1 1/2 cups of pasta
  • 4 cloves of garlic, minced
  • 1 (15oz) can dark red kidney beans, drained and rinsed
  • 1 (15oz) can white beans, drained and rinsed
  • 1 cup of spinach, packed
  • 1 (14.5oz) can Italian green beans, drained


  1. Add vegetable stock, water, tomatoes, carrots, onion, parsley, basil, oregano, thyme, rosemary, bay leaves and sugar to crockpot. Cook on low heat 6-8 hours or high heat 3-4 hours. 
  2. Add in pasta, garlic, beans and cook on high heat until pasta is tender
  3. Add in spinach and green beans and cook for another 10 minutes
  4. Enjoy!

    I love minestrone!! I never enjoyed it as a kid but now it’s one of my favorites.
